Production Details Selected block Rkatsiteli K.05 green harvested during véraison in August. Hand-harvested in small boxes, hand-sorted, full bunched pressing in pneumatic press. Fermentation with indigenous yeasts: 35% new French oak barriques, 35% old oak, 30% stainless steel. Hand stirring during 9 months barrique aging. Blended after 12 months total aging. Minimum filtering before bottling.
