Production Details Hand-harvested Saperavi grapes at early stage of maturity from Kondoli Vineyards. Softly destemmed and gently crushed. Must and skins cooled to 6-8°C for short pre-fermentation maceration. Fermentation in stainless steel tanks at 22-26°C with daily pump-overs for balanced color and tannin extraction. Full malolactic fermentation after fermentation completion. Clarification, stabilization, filtration, and bottling using plant or mineral-based fining agents only, fully compliant with vegan requirements.
