Production Details Hand-picked grapes at end of October/beginning of November. Softly de-stemmed and cooled to 4-6°C. Gently pressed in pneumatic press. Fermentation at controlled temperature of 15°C in stainless steel tanks. Fermentation stopped by cooling to retain natural sweetness and freshness. Wine kept cold at around 0°C before bottling.
