Production Details Green harvested in early August during véraison to reduce yield to 5-6 tons/hectare. Hand-harvested end September in small boxes, hand-sorted, gently de-stemmed, lightly crushed into open-top 225L barriques. Wild yeast fermentation at natural max 26°C with hand cap management only. No mechanical impact on skins. Gravity transfer to oak barrels for maturation. Bottled unfiltered with bottle aging before release.
