Production Details Hand harvested in 10kg boxes. Careful selection of whole grape bunches. Gently destemmed grapes pass through pneumatic press. Must ferments in second- and third-year French oak barrels at 16°C. Alcoholic fermentation complete, wine protected to prevent malolactic fermentation. Aged 3 months in second and third-year French oak barrels in contact with lees, with weekly bâtonnage.
