Production Details Handpicked and hand sorted, mostly destemmed with some whole bunch used in separate parcels. Fermented in concrete and stainless steel fermenters. Cold soak 4-5 days before wild yeast fermentation with average 16 days on skins. Pressed to tank and racked to barrel with natural malolactic fermentation. Aged in mix of old and new puncheons and barriques (12% new).
